Do we need to include addictive/preservative on process flow chart or HACCP plan

If  you blend all of your ingredients together including additive / preservative, it could be included in that step. 

 

If you add them else where in the process it would need to be its own step.   

 

The risk of the additive / preservative needs to be evaluted and addressed as needed somewhere.

It will depend on how its being applied, and what other purpose the process might have.  

 

We have ingredients classified as an additive or preservative that are blended in with the seasoning, that step in the flow chart is just "Blending".  This step serves multiple purposes, so it has a general description.

 

Some other preservative ingredients are topically applied after the product is cooked, and shortly before packaging.  That is a separate step in the flow chart, and it serves only as an application of that one ingredient, so it is narrowly defined.

Hi OMI_LA,

 

As kingstudruler1 and G M have indicated it depends on your process, if your additive/preservative addition is at the blending/mixing stage then there isn’t a need to have a separate step in your Process Flow Chart.

 

Additive/preservative addition at that blending/mixing stage may well be in your Food Safety (HACCP) Plan, especially if there are regulatory limits as to the amount that can be in the product.
