Storage temperature of shell eggs per the CFIA

Good afternoon,

 

 

Could someone please tell me what is the maximum storage temperature of shell eggs per the CFIA?

 

I found the below CFIA website that says that the max temperature for Grade A eggs is 10 degrees Celsius; however, the website mentions licensed egg facilities. Can other facilities that are not licensed egg facilities use the same limit?

There is no storage temperature for shell eggs HOWEVER  we keep our finished cooler at 9C and ship on trailers with refers set at not more than 7C.  There isn't a prescribed value because eggs may be up to 24C when they are graded and may take 2-3 days in storage to get below 10C

 

The biggest factor is actually humidity. If you're storing eggs in an environment anything less than 75% relative humidity, you will lose shelf life rapidly

That is the trailer temp, not actual coolers temp

USDA also does NOT have prescribed cooler temps or product temps for shell eggs
