I am looking for sample coverage materials that can be used to protect knobs, sensors, and electrical plugs from water damage due to sanitation.

We use plastic sheeting to temporarily cover some HMI control panels during the early phases of sanitation (its the same material as combo liners).  Not all of the control panels have high IP ratings like the equipment they're attached to.  The cover is removed and the HMI is hand-washed and sanitized toward the end of the sanitation process.

We do what GM does and use plastic tube liners on leads from control boxes, depending on need we'll use a heat gun to temporarily adhere or shape the plastic to what is being protected and peel it off after.
