I have a question about the label weight declaration.
I have a product that is 100g, and 50g of mushrooms are used in the production according to the recipe. The mushrooms are diced, put in a can, given a brine and sterilized. During the heat treatment the mushrooms absorb a significant amount of the brine (about 20%). At the end of the heat treatment the net weight remains unchanged but the mushrooms' drained weight is 60 g.
When listing the ingredients on the label, what is legally (European Union) correct?
50% mushroom, water, salt, spices or
60% mushroom, water, salt, spices?
How can I address this in the product specifications? Does the customer need to know about this weight change during the technology?
