Sanitary condition

Good morning, 

 

I know answer to my question however I am looking for backup document. In our raw meat processing area employee who works on the line also likes to empty the trash can. We are USDA and SQF facility. I am getting little push back when I said person who works on production line cannot empty out trash also. 

 

Can anyone help me on this?

We don't allow it. The USDA inspector doesn't allow it. The individuals who empty the trash wear a red sleeve to distinguish them. 

Say the USDA inspector doesn't allow it - that can work as 'proof'. Or ask them in front of the person trying to argue with you - that's a little more sneaky.

When we have people from the production floor doing cleaning, they wear a different color smock to differentiate them from the tasks.

White smocks for food handling, dark blue for cleaning. They also wash hands and change gloves before going back to production.

Our USDA would have given us NR, If I haven't seen what happen front of my eye. I just reacted before the inspector. Still, I am getting push back.

That's crazy about the push back. Who is giving you push back. 

 

416.5 Employee hygiene of the USDA code: 
(a) Cleanliness. All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
 
This is the code the USDA would most likely cite if a NR was given.

For SQF these three parts should be enough to indicate that personnel engaged in handling waste will at a minimum be expected to change PPE like frocks and gloves as well as wash their hands after handing waste, before returning to product contact duties.  Most facilities will probably go a step further and have designated people, probably wearing "sanitation" colored garments responsible for these tasks -- to help distinguish for both GMP and food defense reasons who is or is not supposed to be doing those things.

 

11.3.2 Handwashing
11.3.2.1 All personnel shall have clean hands, and hands shall be washed by all staff, contractors, and visitors:
v. After handling wash down hoses, cleaning materials, dropped product, or contaminated material.
 
11.3.3 Clothing and Personal Effects
11.3.3.2 Clothing worn by staff engaged in handling food shall be maintained, stored, laundered, and worn so it does not present a contamination risk to products.
 
11.4.1 Staff Engaged in Food Handling and Processing Operations
11.4.1.1 All personnel engaged in any food handling, preparation, or processing operations shall ensure that products and materials are handled and stored in such a way as to prevent damage or product contamination.
