Hi all, I hope everyone is well.

 

I am after some guidance on interpreting results on ComBase, in reference to legal guidelines for Listeria monocytogenes.

 

We have conducted some testing to verify a shelf life for a batch of products (RTE Sandwiches).

 

The data I have for each includes Aw, pH & Reference Temp which has allowed me to generate a predictive growth model on ComBase.

 

The issue I am facing is my lack of understanding to interpret these results against the legal guidelines which are '<100cfu/g' at the end of life.

 

It has been a long time since I have used log numbers so any help is greatly appreciated.
