Food Fraud and Food Defense

Hey Everyone, 

We recently got audited for initial certification of FSSC 22000 and got 3 minor non conformance. Two of them is that we haven't documented how the initial food defense/food fraud risk assessment was done. Apart from creating procedure for the assessment, we need to submit corrective action reports, can someone suggest what could be reasonable corrective actions for these. I think it happened because we do not have anyone trained in the food fraud and food defense and our external consultant basically did the analysis + he did the internal audit so it was not detected earlier.

We had a minor this year for Food Fraud and this was due to our procurement manager not having formal training in Food Fraud mitigation strategies.   Formal training with a certificate is my recommendation for both Food Fraud and Food Defense for a correction then perform a reassessment based on the information learned in the trainings and find a frequency that works for reassessment for preventive measures.  Run all the findings through a 5 whys or fishbone and document this process so you can fully understand the root cause and submit a solid CAPA.

Hey, The auditor thought that the training and everything else is appropriate, just we didn't had a documented procedure. So training might not be the best option.

Propose the following corrective actions: 1. Designate a team member or members to undergo training in food fraud and food defense risk assessments. 2. Conduct a thorough review of our current food defense and food fraud risk assessment procedures. Identify any gaps or weaknesses and develop a comprehensive plan to address them.

It might be simpler than that.  It sounds as if you just don't have an entry in your annual review plan for someone to review your current food fraud and food defense risk assessments, and perform an updated risk assessment if any significant changes to your production process have occurred.
