Cutting fresh water fish

Hello everyone;

Good day!!!

 

Is there any food safety/quality related issues for fresh water fish caught and process (grading,scaling,cutting) same day?

 

or is it better to hold for a day or some hours before processing?

 

Looking some input from you all.

Fish needs to be either held at crust frozen level (+/- 0C) if it can't be processed same day    

 

Fish , particularly fresh water fish, start to spoil very very quickly  (2 days MAX before freezing)
