Effective record keeping for HACCP

Dear ifsqn members,

 

I need advice; we are a small company from Europe dealing with the storage of frozen foods. We would like to simplify our work and establish as rational evidences as possible. I would like to know if we can keep evidence, e.g. cleaning, temperature control in cold storage rooms right, etc. in an excel table and we list only the responsible person without a handwritten signature?

Can you insert an e-signature?  E.G. the person completing the excel sheet can insert a password protected e-signature per entry?

 

Depending on the law of the land---those records could be legally binding and as such should have some form of control for the entries
