We process fresh raw meat products generating meat trims. The trims are boxed and blast frozen before (due to limited holding freezer capacity on site) being dispatched to a BRCGS Certified Frozen Cold store. The trims are then recalled to site as needed for further processing.
Current Controls include:
- The cold store is a BRCGS Certified approved supplier.
- An agreement is in place between our company and cold store detailing expectation of service.
- The process is included on our HACCP Flow.
- All Product is inspected when it returns to site.
- Are these sufficient controls?
- Do I need to undertake a Hazard Analysis of the outsourced process steps as part of our HACCP plan or is sufficient to reference the cold stores plan (of which we hold a copy)?
Also...
Due to space limitations on site we will arrange for the delivery of bulk consignments of raw materials/finished products directly into BRCGS Certified cold store (Frozen Products) or Warehouse (Dry seasonings). These products are then delivered into our site as needed.
Current Controls include:
- the cold store/warehouse carry out goods in checks in line with their HACCP
- The acceptance requirements and the need to alert our company in the event of deviation/issue is detailed in the agreement between our business.
- All products are checked inline with our goods in procedure on delivery to our site.
- Are these sufficient controls?
