Can anyone recommend a good folding knife (EU) that would be approved for use in the production?

Why a folding knife in particular? Safety? There are lots of MD knives available that are safe for employees to use (negligible risk of injury)
Yeah I think it's for people taking them around in their pockets
What is the knife used for? Their pockets are unlikely to be sanitary, unless we're talking about a frock.
Detectamet makes a few different styles of safety knives that can be tethered or etched for traceability.
You really should consider changing your practice
Knives should be included in some sort of inventory, A) for cleaning and B) for foreign material losses
Those are sanitized at the middle of each production shift, and at the end of the day.
This satisfies the sanitation and the tracking requirements.

Lol, yee haw. Moo moo buckaroo....
We actually use cheap scuba knives. They're all stainless, easy to clean and sharpen, cheap to replace.... We of course throw out the plastic sheath and stuff, and ours are kept on retractable cables so they can't sneak away or fall into product, and only sanitation has keys to remove them for washing, etc.

No, that is not a "Snap-Off" blade, it is enclosed. The blade cannot "Snap-Off".
