Procedure for urgent incidental non-regular production

Hi all, our production location sometimes receives an urgent requests to produce a certain batch that we normally would not.
Off course we are happy to assist when possible. I request all the normally required information (specifications, chemical composition, shelf life studies etc.). However in my experience it is difficult to receive all documentation that we would have for regular non-incidental production in the short period of time (which normally takes us a few weeks). What would the best practice be for such cases? Can we forego certain documentation if the other party is willing to guarantee the quality/safety. My quality brain is screaming NO, but I am trying to be realistic  :helpplease: .

A little context may assist, eg Is there a FS Standard involved ??

yes, all parties are GFSI (usually IFS) certified.

Is there a mutually agreed contractual specification for the product ?

JFI i have never met a customer who guarantees it does not matter if the product received has a significant safety risk for the intended consumer. Sounds like a potential legal failing both ways.

In those cases I would determine what documentation and information is absolutely necessary for product safety.  That would be your baseline requirement.  If it relates more to quality then that's a further discussion with the potential customer and how the contract should be established.
