BRC Clause 5.2.5 - Cooking Instruction
I'm working on our BRC plan prior to our audit visit in a couple of weeks. Clause 5.2.5 states that cooking instructions shall be fully validated and I'm struggling with the correct information needed or where to find validation information. We package beans into consumer size packages, package quick oats into consumer size packages and also provide a RTE flavored popcorn. Would there be a specific website or data source to acquire the needed info - or is there info that would be needed for this?

5.2.5 is about validation of instruction that are provided to the consumer on the product label - are you giving these for your products? (e.g. if the popcorn is supplied RTE then presumably no preparation is required at the consumer end?).
And if so, do they impact food safety?
If not, then you're arguably exempt from the clause.
We have "cooking instructions" on the pulses and oatmeal only. Would these need a validation to support this clause?
In the past I worked at a USDA facility. There the cooking instructions needed to be validated. We prepared the items according to the cooking instructions and took final internal temperatures to show that it would provide a "kill step" for salmonella.

5.2.5 - Where cooking instructions are provided to ensure product safety, they shall be fully validated to ensure that, when the product is cooked according to the instructions, a safe, ready-to-eat product is consistently produced.
