Protecting food from microbiological contamination of saprophytes and pathogens during the process is essential to comply with regulatory requirements and protect consumers from suffering foodborne illness. In the environmental monitoring plan, it is necessary to take into account the food group, its risk category (Intended use) and the zoning of the plant in order to establish a good sampling plan. In the sampling plan we must take care of the representativeness of the sample, the ability to recover the microbial contamination and taking care of the sample during its collection and shipment to the analysis laboratory. Considering all these cares, we can be sure that the interpretation of the results will allow us to infer about the real conditions of the plant environment and make correct decisions about effective corrective actions.
