Standard for Shelf life for raw shell egg

Hello everybody,

I'm from agricultural company where we sell raw shell eggs, egg products and chickens too.
I currently involved in verification of raw shell egg as we claimed it is 35 days at refrigerated temperature.
Our parameters are condition of yolk membrane (intact or broken), condition of albumen (thick or thin), smell and Haugh Unit.
The test was done at two temperature: ambient and chilled temperature where 35 eggs were tested on both temperature respectively.

Few question I want to ask:
1.May I know any standard that I can refer to do shelf life of raw shell egg?
2.Is our parameters already adequate?

Hi Shazlin,

USFDA gives 3-5 weeks for "quality"

The US "sell by"  labelling system is "Regulated" eg -

(validation of this system was not evident)

USDA's explanation -

Dating of Cartons
Egg processors typically print dates commonly called "Code Dates" on cartons for purposes of rotating stock or controlling inventory. "EXP," "Sell By," and "Best if Used Before" are examples of terminology used for code dating. Use of code dates on USDA graded eggs is optional; however, if they are used, certain rules must be followed.

If an expiration date is used, it must be printed in month/day format and preceded by the appropriate prefix. "EXP," "Sell By," and "Not to be sold after the date at the end of the carton" are examples of expiration dates. Expiration dates can be no more than 30 days from the day the eggs were packed into the carton.

Another type of code dating used indicates the recommended maximum length of time that the consumer can expect eggs to maintain their quality when stored under ideal conditions. Terminology such as "Use by", "Use before", "Best before" indicates a period that the eggs should be consumed before overall quality diminishes. Code dating using these terms may not exceed 45 days including the day the eggs were packed into the carton.

Dear Charles,
Thanks for the info.

But the information that you given is too general.
It did not tell about the parameters that should be taken during the shelf life testing.

One more question, is microbial test needed for shelf life study?

We sell chilled egg with shelf life 180 days, stored at 0...5 C.
It depends on region.
In Europe its not allowed to sell chilled eggs.
To USA we export with 90 days.
To UAE with 90 days.
To Angola, Gambia with 180 days.

I'm in shell eggs in Canada

The only way to prove shelf life acceptable to USDA (CFIA too if you plan on exporting) is to have an accredited lab perform a controlled shelf life study for you.  The government isn't going to tell you how to perform a shelf life study

NOTE: you are processing a regulated commodity and as such you must follow the USDA rules

35 days seems really low..........

How are you washing the eggs?
