Pig Ears and Pig Snouts

We are looking for ways to use the bi-products from my hogs, and the topic of pet food/treats was brought up. Does any one know of any resources that would be helpful in doing research into this type of manufacturing. Specifically the process, regulations, and hazards to be concerned with.
