I don't know how useful this would be, but here are some slides that I put together for a recent meeting. High level material. Sources aren't quoted, but were some general google searches, the FDA's Food Defense builder and GFSI's technical document on Food Fraud (Tackling Food Fraud through Food Modernization Systems, published in May 2018.)
