HACCP plan for Offline repackaging of RTE

Does anyone have a simple HACCP plan for offline repackaging of RTE frozen meat.

 

This would be done by opening/re-exposing RTE frozen product manually on tables adjacent to the scale and bagger and conveyor to boxing.

Why are you reworking

 

How is it packaged?

 

Are you thawing?

 

Is this all you'll be doing at your facility

This is done to separate rework from repack just off the main pack line. Both have met CCPs for both cook and chill and are being re-exposed by opeing final packagin to separate the rework (unacceptable quality) from the repack (acceptable quality). No thaw, packed in heat sealed poly packages 1-10 lb bulk. 

if all you are doing is pulling bags, I would add it as an addendum.....put an ** at the location where rework occurs and add the rework flow on a separate diagram
