Do we absolutely need 1 QC/shift?

I was wondering, if we must absolutely have 1 QC per shift? Especially considering that our HACCP plan did not identify any CCPs.

Do you think an operations person can be trained and follow though on the monitoring that needs to be completed? If yes, then the answer is no, if no then the answer is yes
