Allergen residues in finished product

Has any work been done in the area of ACPs and the residual allergen level in the retail unit after using reasonable due diligence. Lets say I am doing the best I can to avoid unintended addition of allergens and feel that before I conclude I need to use a "may contain" statement I need to first see if levels are high enough to merit adding a given allergen to the contains list rather than defaulting to may contain.

this is a touchy one, I know CFIA really does not like the "may contain" statement-they feel that it is a poor substitute for managing a known allergen

 

I would much rather do a series of allergen protein analysis then put the may contain statement on it-----the other thing to consider is customers who may shy away because of a loose statement

 

Which allergen are you dealing with?

If at all possible stay away from the may contains statement.  Do your due diligence to manage the allergen as best you can.  If you can't manage it, then you label with the allergen.
