Hi Furfarmand. I would like to ask how the pasteurized fruit drink to be tested for micro? In our lab, we test our products three days after pre-incubation at 23 degrees celsius. Is it correct? Or we can test immediately after it produced?(To lessen the testing period and release for market immediately.)

Hi Rener De Jesus,

I don't work in juice so I can't speak to best practices in that industry. I might recommend purchasing the applicable chapter of the compendium of methods for the microbiological examination of foods. You can purchase the chapter on juices by itself online here: http://ajph.aphapubl...5/MBEF.0222.063
