How to remove worm from broccoli

Dear All,

 

We are facing lot of complaint on worm on broccoli in ready to cook fresh cut product that we supplied to restaurants. We are used chlorine based sanitizer to disinfect the fresh cut broccoli but it is can't remove the worms in stem and worms that similar colour with broccoli. Anyone please advice

Is that not something the farmer should do with his GAP? Are you in organic products?

Can you not see them during reception control? you might not want to handle products contaminated with worms.

The broccoli imported form china it is comes in containers. When ever the monsoon session begins there will be lot of worms in the broccoli. We can't reject them to supplier since it is comes from china and our facility is malaysia. I need find the way to remove them during our production. Our process flow is Sorting, Cutting to florets, wash and disinfection and vacuum packed. I believe we only have way to remove them during sorting or washing.

Can you not see them during reception control? you might not want to handle products contaminated with worms.

Try using salt when your are carrying out floret washing, it helps in removing the worms which are hidden inside the florets but ensure to carryout in small batches. Worms will float on the salt water. Worms are issue during off season crop in case of broccoli and cauliflower.

Agreed.

To draw the “broccoli worms” out of the broccoli trees, you need to soak it in a sink of cold water to which you've added 1/4 cup of salt and 2 tbsp of vinegar. You will need to keep the broccoli heads submerged in the water for at least 20 minutes.

It appears that from a "worm" POV the raw material has no agreed limit on worm content.

 

i assume this is typical of the business and the receiver is obliged to implement a de-worming step.

 

It's a bit like parasites in frozen fish except that this usually does have agreed limits. Also for vegetables mobility is maybe now added (not frozen?).
