Methods of screening for pitted dates

Hi All

 

We have recently embarked on a project to make a blended date based product where we are blending pitted dates with other ingredients into a 'dough' prior to pressing and shaping. One of the risks we have identified is remaining pits / pit fragments from the dates purchased. We have negotiate a below average pit count into the specification with the supplier but still wish to further reduce onward risk of contamination form those left over to the end product. 

 

Has anyone had similar experiences and can think of any methods of screening either the incoming raw material or 'dough' for remaining pit fragments other than 100% visual inspection or the expense of x ray or similar. We have considered mesh screening of the produced pulp but the texture does not lend itself to this...

Obviously the most effective measure would be to use x-rays for screening the raw material. You may be ruling it out due to major expanse  involved.

 

May I suggest to contact the close by research facility or University which will be using x-ray machines for many other reason and sign a contract with them to screen your dates. Yes you have to pay some fee for their services but it will be reliable and lot cheaper than installing you own x-ray machine.
