SQF 12.6.8.1 Core Temperatures
How do others deal with product core temperatures (SQF 12.6.8.1)? Currently we take temperatures of vehicles incoming/outgoiing & check external temperatures of some products but to check the core temp prior to shipping without product damage is very difficult.
What we would do is get the the middle of a skid take a few boxes off the sides and spme ou of the middle and put the thermometer in the middle let it sit for a min on a box or if you box has holes in it you can put it in there, thats a core temp of your product before it leaves i have no idea how else you do it.
from the code: " ....core product temperatures recorded at regular intervalsduring loading as appropriate."The word APPROPRIATE is so wonderful here.You don't need to damage product in order to take random temps at core during loading, select the mid-point in the trailer and either tape a temp sensor on a box just prior to it being loaded and then once load is complete pull the sensor and do your review and recording. Second way is to simply go to the mid-point and remove a couple of boxes, drop a sensor on down/or on top, etc and let it set up for a minute or so.I see most do the first method since it is the easiest and the fork lift drivers or power jackers know exactly where to place/on what skid, etc. and then can easily retrieve.

Based on yr quote, it apears that SQFare interpreting "core product temperature" as "product temperature at the core". Semantic nonsense but Viva Semantics.
afaik, the assumption that externally measured temp. is related to internal condition also relies critically on the probe being positively sandwiched between adjacent packaging units.
