Welcome, Omar.
Everyone's HACCP plan will be different, even if they involve the same type of product. Each plan has to be set up based on your process, your suppliers, and your facility.
There are some great resources here on setting up a HACCP plan, and I encourage you to learn more about how it works before you start up your plan. You will need someone to administer the plan, and that person is required to have been trained, so getting the training formally is a wonderful way to start.
Once you have been trained, then you will be able to ask more specific questions.

Read as much as you can and find a place to get some HACCP training to help you get started. And visit the IFSQN forum often for tidbits of information.
