HACCP student projects

I'm trying to finish up my HACCP student project for my Food Safety and Sanitation class, and my instructor changed things up at the last minute to include receiving in our HACCP plan (We were originally supposed to just start at preparation.) I have looked, and looked, and looked, all over the internet for a sample HACCP plan that includes receiving instructions but, for whatever reason, my efforts have been fruitless.

 

I was wondering if y'all know where I might be able to find a document sample or template for a HACCP plan to include receiving? I've been so lost on this whole project, really. I thought I was about done until the receiving thing gone thrown in there, and then looking at some of my classmates' projects, I don't even think I'm doing the darn thing correctly. :/

Hello grimrabbit,

  Receiving of raw materials,packaging materials, and ingredients used in processing of finshed food  products comes under pre- requisites programes (prerequisite program with purchase specifications )or it may come under ccp depending upon the risk assesment of incoming material.

List the product ingredients and incoming materials (including raw materials, product ingredients, processing aids, packaging materials) that are used during the manufacturing process. This exhaustive listing is required for proper identification of all potential hazards that could apply

 Normally certificate of analysis/suppliers guarantee/approved vendors are used for incoming/received materials.for e.g. Frozen foods to be received at the temp of -18C etc and refrigerated foods to be received at or below 4C.Also you have to apply your regulatory requirements of your country for  limits for acceptable levels of various hazards in  coming goods.
