we are using knives during production. can anyone help me about documented policy for the control of use of knives.

Dear pherish,

I am (almost) certain this is discussed in the free HACCP/hygiene dwl package in the documents exchange and includes a procedure / form also. Possibly referred to under control of "sharps"
